Grapefruit Rosemary Spritz

INGREDIENTS

For the Rosemary Honey Syrup:

8 oz honey

4 oz water

4 sprigs of rosemary

For the Drink:

4 oz fresh grapefruit juice, chilled

1 oz rosemary honey syrup (from above)

6 oz white wine, chilled

4 oz sparkling water

2 grapefruit peels

2 rosemary sprigs

INSTRUCTIONS
  1. Combine the honey, water, and rosemary in a small saucepan. Bring to a simmer, then remove from heat and let cool completely. Strain out the rosemary.
  2. Fill a glass with ice. Add the grapefruit juice, rosemary honey syrup, and white wine. Stir to combine.
  3. Strain into red wine glasses filled with fresh ice. Top with sparkling water. Garnish with a grapefruit peel—rub the rim of the glass with the zest side, then place it in the drink. Add a rosemary sprig to each glass to finish.
